Title: Mocha Pound Cake Categories: Cakes Yield: 1 Servings 2/3 c Shortening 2 c Cake flour; sifted 1 1/4 c Sugar 1 tb Instant coffee 1/2 ts Salt 1/2 ts Cream of tartar 1/4 ts Baking soda 1/2 c Water 1 ts Vanilla 3 lg Eggs 2 oz Baking chocolate; -unsweetened, melted Cream shortening. Stir in next eight ingredients and then beat for two minutes. Add eggs and melted chocolate and beat one minute more. Pour into well-greased and floured loaf pan and bake in 350 degree F oven for about one hour. Cool in pan for 10 minutes and then turn out on rack. When cold, sift confectioners' sugar over top.
