Title: New Mexico Pasta Salad

Yield: 5 Servings

1 1/2 c Dry pasta; cooked
1/2 c Green onion; finely chopped
1/2 sm Red onion; diced
1 c Corn; cooked
1/2 c Black beans; cooked
2 sm Tomatoes; chopped
1/2 sm Red bell pepper; diced
1/2 sm Anaheim chili pepper; finely
-diced
3 tb Lowfat mayonnaise
1/4 c Black olives; chopped
1 Sprig fresh cilantro; minced
1/2 ts Red chile pepper flakes

Combine all the ingredients, excluding the salt, pepper, olives,cilantro,
and chile pepper flakes in a medium-size bowl. Salt and pepper the salad
according to individual taste. Serve equal portions of the salad on five
salad plates. Garnish with the olives, cilantro, and chile pepper flakes.
