Title: Oatmeal Raisin Streusel Muffins Categories: Breads Yield: 12 Servings 1/4 c Margarine; melted 1 c 1% milk 1/4 c Egg Beaters® 99% egg -substitute 2/3 c Oatmeal; old fashioned 1 1/3 c Flour 1/3 c Sugar 1 tb Baking powder 1/2 ts Salt 1/2 ts Cinnamon 3/4 c Raisins ----------------------------------STREUSEL---------------------------------- 3 tb Brown sugar 3 tb Oatmeal; old fashioned Combine melted butter, milk, egg & 2/3 cup oats. Let stand 10 minutes. Combine flour, sugar, baking powder, salt & cinnamon. Stir wet ingredients into dry ingredients just until combined. Fold in raisins. Spoon batter into 12 greased muffin cups, filling each about 3/4 full. Combine streusel ingredients & sprinkle over muffins. Bake at 400 F for 20 - 22 minutes.
