Title: Oatmeal-Raisin Muffins

1 c Quick-cooking oats;uncooked
1 c Nonfat buttermilk
1/4 c Plus 2 Tbsp.firmly packed
-brown sugar
1/4 c Unsweetened applesauce
1/4 c Egg substitute;thawed
3 tb Vegetable oil
1 c All-purpose flour
1 ts Baking powder
3/4 ts Baking soda
1/4 ts Salt
1/3 c Raisins
Vegetable cooking spray

Combine oats and buttermilk; let stand 1 hour. Add brown sugar and next 3
ingredients to oat mixture,stirring well. Combine flour,baking powder,soda
and salt; add to oat mixture, stirring just until dry ingredients are
moistened. Fold in raisins. Spoon batter into muffin pans coated with
cooking spray, filling three-fourths full. Bake at 400*F. for 15 minutes or
until golden. Yield: 1 dozen (148 calories each)
