Title: Onion Soup Au Gratin

Yield: 1 Servings

1 Loaf french bread
3 tb Butter
2 c Thinly sliced onions
1/4 c Flour
5 c BEEF STOCK
Salt & pepper
3/4 c Grated med cheddar
3/4 c Grated swiss
1/4 c Grated Parmesan

Preheat oven to 325. Cut bread into 1/2" thick slices. Bake 25-30
minutes or until dry & lightly browned; set aside. Melt butter in
frying pan; cook onions over low heat, stirring occasionally until
rich golden brown, 30 minutes. Sprinkle flour over onions & cook,
stirring, 2 minutes. Add stock, salt & pepper; simmer 30 minutes.
Transfer to bowls & top with bread. Combine cheeses & sprinkle over
bread. Place under broiler until bubbly & lightly browned.
