-pieces
1 Cucumber; sliced thin
2 Oranges; peeled and
-sectioned (or you can use
-a large can mandarin
-oranges)
1 lg Sweet red onion; sliced
-thin
2 Avocados; peeled and sliced
-(should be ripe but firm)

----------------------------------DRESSING----------------------------------
1/2 ts Grated orange peel
2 tb Red wine or balsamic vinegar
2 tb Sugar
1/4 c Orange juice
1/2 c Olive oil
1/4 ts Salt
1 tb Lemon juice

Hi everyone! Here's a great summer salad!

Assemble all the ingredients except dressing and toss to to mix; chill.

DRESSING: Mix together all ingredients and chill before tossing with salad.
When chilled thoroughly pour over salad and toss to coat. This salad is
great with crusty french bread!
