Title: Oriental Spaghetti W/cucumber and Spicy Pe

Yield: 2 Servings

1/4 c Smooth peanut butter
1 tb Soy sauce
1 tb Fresh lemon juice
1 Clove (small) garlic; minced
1/4 ts Dried hot pepper flakes; or
-to taste
1/4 ts Sugar
1/4 c Hot water
6 oz Spaghetti
1 Cucumber; peeled, halved,
-seeded; cut diagonally into
-1/8" slices
1/3 c Thinly sliced scallion
Salt and pepper; to taste

Use a blender to mix peanut butter soy sauce, lemon juice, garlic, pepper
flakes, sugar and water until the sauce is smooth. In a kettle of boiling
salted water, boil the spaghetti until it is just tender. Drain and rinse
briefly under cold water. Drain well, transfer to a bowl. Toss with the
sauce, cuke, and scallions. S&P to taste. Serve the pasta at room
temperature.
