Oven Roasted Chili Salmon on Spinach-Onion Fondue
Title: Oven Roasted Chili Salmon on Spinach-Onion Fondue Categories: Cooking liv, Import Yield: 1 Servings 2 lg Red onions; sliced 2 c Spinach; sliced 4 lg Banana leaves; parchment -paper and/or aluminum foil 3 c Cooked jasmine rice 8 3-ounce pieces of salmon -fillet, sliced on the bias Chili paste; recipe to -follow 1 bn Scallions; chopped Preheat the oven to 350 degrees. In a large saute pan, cook the onions until caramelized. Remove the pan from the heat and add the spinach. Taste for seasoning. Lay a banana leaf out and fold in half. Place a small mound of rice on the leaf and top with the vegetable mixture. Place a serving of salmon on top of vegetables and smother the paste over the salmon. Bake for 20 minutes.
