Title: Parmesan Pork Roast Categories: None Yield: 1 Servings 2 lg Eggs; Slightly Beaten 3 tb Vegetable Oil 2 Rolled Pork Shoulder Roasts; -Bone-In, 4Lbs Each 1/2 c Seasoned Bread Crumbs 1/3 c Grated Parmesan Cheese 1 ts Thyme Preheat Roast-Air Oven to 400 degrees. Combine eggs and oil in small bowl; whisk to blend. Brush evenly over roasts. Combine crumbs, cheese and thyme; pat evenly onto roasts. Place roasts on rack. Set rack in preheated cookwell, cover; plug in Roast-Air fan. Air-roast 25-30 minutes per pound or until internal temperature reaches 155 degrees on meat thermometer. Unplug Roast-Air fan; turn off temperature control. Allow meat to stand, covered 10 minutes before serving.
