Title: Peach Salsa

2 c Diced, peeled ripe peaches
1/2 c Diced red onion
1/2 c Diced red pepper
1/2 c Finely minced jalapeno -- or
Serrano chili
2 ts Olive oil
2 tb Lemon juice
1/4 c Minced fresh mint
2 ts Grated fresh ginger

This is a Compu-Chef recipe that is great with grilled or roasted meats and
chicken. Try mixing it with some brown sugar and rum or brandy for a great
ham glaze. Combine all ingredients. Let flavors mellow for 30 minutes and
serve
