Title: Peachy Scotch Pie Categories: Fruit, Pies Yield: 8 Servings 2/3 c Brown sugar 3 tb Flour 1/2 ts Salt 1/4 c Butter 1 tb Lemon juice 1/4 ts Vanilla extract or almond -extract 1 cn Peach slices (1 lb. 13 oz.); -drained In saucepan, combine sugar, flour, salt, butter, lemon juice and extract; mix well. Bring to rolling boil, over medium heat, stirring constantly. Boil 1 minute, stir in peach slices. Pour into 9 inch pie shell. Top with lattice crust. Bake at 400 degrees for 40 to 45 minutes.
