Title: Peanut Butter Magic Middle Cookies Categories: None Yield: 1 Servings --------------------------------COOKIE DOUGH-------------------------------- 1 1/2 c Flour 1/2 c Unsweetened cocoa 1/2 ts Baking soda 1/2 c Sugar 1/2 c Brown sugar 1/2 c Margarine; softened 1/4 c Peanut butter 1 ts Vanilla extract 1 Egg ----------------------------------FILLING---------------------------------- 3/4 c Peanut butter 3/4 c Powdered sugar Preheat oven to 375 degrees F. Cookie Dough: In a small bowl, combine flour, cocoa and baking soda. In a large bowl, beat sugar, brown sugar, margarine and 1/4 cup peanut butter until light and fluffy. Add vanilla and egg; beat well. Stir in dry ingredients. Set aside. Filling: In a small bowl, combine filling ingredients. Roll into 30 - 1 inch balls. Flour hands if necessary. Shape 1 tablespoon of dough around 1 peanut butter center, covering completely. Place 2 inches apart on ungreased cookie sheets. Flatten somewhat with bottom of glass dipped in sugar.
