Title: Peanut Muffins Categories: None Yield: 1 Servings 1 1/2 c All-purpose flour 1/4 c Sugar 1 tb Baking powder 1/4 ts Salt 2 Eggs; lightly beaten L/2 cup butter or margarine; -melted L/2 cup milk 3/4 c Chopped unsalted dry roasted -peanuts. This was in the Taste of Home Cookbook. In a large bowl, combine flour, sugar, baking powder and salt. . Combine eggs, butter and milk, add to the dry ingredients and stir just until moistened. Fold in the peanuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 for 15 minutes or until muffins test done. Yield one dozen.
