Title: Pear Chutney Categories: Condiments, Fruits Yield: 8 Servings 10 c Sliced, firm, ripe pears -- (5 pounds) 1/2 c Finely chopped green pepper 1 1/2 c Seedless raisins 4 c Sugar 1 c Chopped crystallized ginger 3 c Cider vinegar 1/2 ts Salt 1/2 ts Whole allspice 1/2 ts Whole cloves 3 Cinnamon sticks -- each 2 Inches long Place pears and the next 6 ingredients in a saucepan. Tie allspice and cloves in a cloth bag and add along with cinnamon. Cook slowly until pears are tender and mixture is thick, about 1 hour. Remove spices. Ladle into hot, sterilized jars.
