Pennslyvannia-Dutch Apple Cake
Title: Pennslyvannia-Dutch Apple Cake Categories: None Yield: 1 Servings 6 Med-sized apples, peeled, -cored and thinly sliced 1/4 c White sugar 2 ts Cinnamon 3 c All-purpose flour 1 1/2 c White sugar (yes, I know -there is one above!) 4 Eggs 1 c Cooking oil 2 ts Vanilla extract 1/3 c Orange juice 1 1/2 ts Baking soda 1 1/2 ts Baking powder Toss the apple slices with 1/4 cup sugar and the cinnimon ; set aside. Mix together the flour, 1 1/2 cups sugar, eggs, oil and vanilla, orange juice. baking soda and baking powder. Beat with an electric mixer at medium speed. (The batter will be very thick). Spread a 3rd. of the batter in a greased 10 inch tube or bundt pan, top with half the apple mixture. Repeat layers ending with batter. Bake in a pre-heated 350 degree oven for 1 hour. Remove pan to wire rack; cool for about 10 minutes. remove cake from pan.
