Title: Perky Squash Soup

Yield: 1 Servings

1 md Onion; coarsely chopped
1 Clove garlic; crushed
2 tb Buttter; melted
4 md Yellow squash; sliced 1/4"
-thick
1 c Chicken broth
1 cn (8 oz) tomato sauce
1 1/2 c Water
1/2 ts Salt
1/2 ts Pepper
1/2 ts Parsley
1/4 ts Dried whole thyme
1/8 ts Dried whole oregano
Grated parmesan

Saute onion and garlic in butter in dutch oven til tender. Add remaining
ingredients except cheese. Cover and simmer 20min. or til squash is tender.
Top w/ cheese. Yield: about 6C.
