Title: Pineapple Bundt Carrot Cake Categories: Cakes Yield: 12 Servings 3 c Flour 2 c Sugar 1 1/2 ts Baking soda 2 ts Cinnamon 1 1/2 ts Salt 1 ts Baking powder 1 8 3/4 oz crushed pineapple 2 c Grated carrots 3 Eggs beaten 1 1/2 c Oil 1 1/2 c Chopped nuts 2 ts Vanilla Mix all dry ingredients together. drain pineapple and reserve juice. add juice to dry mixture. add eggs, oil and vanilla. Beat for 3 minutes. Stir in carrots, pineapple and nuts. Bake in bundt pan 325 for 1 1/2 hours. cool 10 minutes in pan before removing. Sprinkle with powder sugar.
