Pineapple Muffins


Title: Pineapple Muffins

Yield: 15 Servings

2 c Whole-grain wheat flour
1/4 c Sunflower seeds
1 tb Baking powder
1/2 ts Ground cinnamon
1/2 ts Ground allspice
2 c Crushed pineapple in juice
1/4 c Honey
2 tb Molasses
2 tb Applesauce
1 ts Egg Beaters® 99% egg
Substitute
Well mixed in:
2 tb Water

Combine the dry ingredients together in a large bowl. Combine wet
ingredients in a separate bowl. Add wet ingredients to dry ingredients.
Stir to mix. Spoon into muffin cups (use non-stick pan, if possible). Fill
cups only to about 3/4 full. Bake at 375 degrees for 15-20 minutes.

HELPFUL HINTS: Do not use paper muffin cups--since there is no oil in these
muffins, they will stick to the papers.
