Title: Poached Turkey Breast or Hindquarter Categories: Poultry Yield: 4 Servings Frozen turkey breast or -hindquarter Chicken soup stock (see -recipe) or canned chicken -broth These cuts of turkey are now available frozen year-round. We are silly not to make better use of this wonderful meat. Place the melted hindquarter or breast in enough Chicken Soup Stock (see recipe, or use canned chicken broth) to cover and simmer, lid on, for about 40 minutes.
