Puff Pancake with Peaches and Sausage
Title: Puff Pancake with Peaches and Sausage Categories: Breakfast Yield: 1 Servings 1 tb Butter 2 Beaten eggs 1/2 c Milk 1/2 c Flour 1 tb Sugar 1/8 ts Salt Filling: 1 pk Sausage 1 cn (16 oz) sliced drained Peaches 1/3 c Maple syrup ds Ground nutmeg To make pancake, heat oven to 400. Place butter in 9" pie plate & heat in oven until melted. Whisk together eggs, milk, flour, sugar & salt until smooth. Pour into pie plate; do not stir. Bake 13-15 minutes or until golden. Meanwhile, cut sausage links into halves. Place in large skillet & brown over medium heat, about 6 minutes. Remove drippings. Add peach slices, syrup & nutmeg. Bring to a boil & simmer until syrup has thickened & sausage & peaches are glazed. Spoon filling into pancake & serve immediately.
