Title: Quick To Fix Southwestern Rice Categories: None Yield: 4 Servings 2 c Water 1 Jar; (8-oz) chunky salsa 2 c Quick-cooking rice; uncooked 1 cn (15-16 oz) black beans; -drained and rinsed 1 cn (11-oz) corn with red and -green peppers Tortilla chips; (optional) Combine water and salsa in large skillet over medium-high heat; bring to a boil. Stir in rice, beans and corn. Remove from heat; cover and let stand 10 minutes. Fluff with fork; serve immediately with tortilla chips if desired.
