Title: Red Beans and Rice #13 Categories: Vegetable Yield: 4 Servings 1 lg Onion; chopped 2 cn Black beans (I know it says -"red" beans; but I prefer -black; purists can -substitute kidney beans) 2 Bay leafs 1/2 c Chopped fresh parsley (do -not use dried parsley!!!!) Tabasco to taste (boy; does -that leave an opportunity -open!) Add enough water to make it just a little bit soupy. Simmer for one hour, stirring periodically. Serve over rice. The original recipe also calls for adding sausage, like a polska kilbasa, not breakfast sausage. I'm vegetarian, so I don't add it.
