Title: Red Devil's Food Cake4 Categories: Cakes Yield: 16 Servings Cake---- 1 2/3 c Unbleached flour 1 c Granulated sugar 1/2 c Brown sugar -- packed 1 1/2 ts Baking soda 1 ts Salt 1/2 c Margarine -- softened 1 1/2 c Buttermilk* -- at room Temperature 1 ts Vanilla 2 Egg whites -- whipped 2 oz Unsweetened baking chocolate Squares -- melted Topping---- 3 c Powdered sugar -- sifted 1/3 c Margarine -- softened 1 1/2 ts Vanilla 2 tb Skim milk -- at room Temperature Preheat oven at 350. Prepare 2 round pans with cooking spray and flour. To prepare cake, combine flour, sugars, baking soda, and salt. In another mixing bowl, combine margarine buttermilk, vanilla, egg whites, and chocolate. Mix dry ingredients with wet ingredients just until moistened. Pour mixture into prepared pans. Bake for 30 to 35 minutes. Meanwhile, to prepare frosting, combine powdered sugar, margarine, vanilla, and milk until spreading consistency. Fill and frost layers.
