Title: Rhubarb Chutney #1

Yield: 8 Servings

1/3 c Chopped onion
1 Clove Garlic; minced
1/4 c Apple juice (for frozen
-Rhubarb use only; 2 t.)
2 c Cut up rhubarb
1/4 c Raisins
3 tb Sugar
1/4 ts Cardamom
1/8 ts Crushed red pepper flakes
1 tb Cider vinegar

In a 1 quart Microwave bowl, combine: onion, garlic and apple juice. Cover
and Microwave until onions are crisp-tender, 2-2 1/2 minutes. Add rest of
ingredients and mix well. Cover and Microwave on High for 5-5 1/2 minutes
until tender, stirring once.
