Roasted Beet Salad
Title: Roasted Beet Salad Categories: Ew, Text, Import Yield: 1 Servings 2 bn Baby beets,; roasted 1 lb Mesclun or mixed greens 1/2 c Toasted walnuts 1 Shallot,; chopped 3 tb Walnut oil 2 ts Raspberry vinegar 1/4 lb Goat cheese Salt Pepper Cut off beet tops. In a large serving bowl, toss beet tops with mixed greens and walnuts. Add beets to salad. In a skillet, saute shallot in walnut oil. Deglaze with vinegar. Pour this dressing over salad and toss. Sprinkle top with goat cheese. Season with salt and pepper and serve immediately.
