Title: Salad of Cod, Green Beans, Onions and Cherry Tomatoes Categories: Cancer, Fish, Salad Yield: 2 Servings 3 1/2 oz Cod fillet -- broiled 10 oz Green beans -- prepared 2 tb Minced red onion 8 -- sliced DRESSING 1 tb Fresh lime juice 1 tb Raspberry vinegar 1 tb Extra virgin olive oil 1 ts Cilantro -- finely chopped 1 ts Jalapeno -- minced Salt and pepper 2 tb Toasted wheat germ -- for Topping Combine chunks of a broiled cod fillet with steamed green beans, cut in 1-inch lengths, some minced red onion, and a few sliced cherry tomatoes. Toss the salad gently with a zesty dressing made from a tablespoon each of lime juice, raspberry vinegar and olive oil. Season to taste with cilantro, jalapenos, salt and pepper. Add healthy calories from a carbohydrate, like wheat germ, and enjoy.
