Title: Salmon Croquets

1 cn (large) salmon, opened and
-drained
1 Box (8oz) of Potato pancake
-mix (I use Manischevitz.
-Found in the Jewish food
-section)

Follow directions on potato pancake mix box. It should only require 2 eggs
and water. Break apart the salmon flakes. Do not do it too finely. Mix the
salmon in the potato batter and let stand for 10 minutes. Add 1/4 cup
plain, fine to course bread crumbs. Mix well. Fry in a oil until lightly
browned on both sides. Drain on a paper towel. Serve with tartar sauce or
thickened ranch dressing.
