Saucy Stuffed Chicken
Title: Saucy Stuffed Chicken Categories: None Yield: 1 Servings 2 c Stuffing Mix 1 c Boiling water 2 tb Margarine 4 Boned, skinned chicken -breasts, flattened for -rolling Some olive oil for cooking 1 Jar (12-oz) chicken gravy -(or your own gravy) 1 cn (15 1/4-oz) whole tomatoes, -drained and chopped 1/2 ts Dry thyme leaves -or- 1 ts Fresh thyme 2 tb Sweet vermouth (or apple -juice) Mix stuffing, water, and butter. Let stand 5 minutes. Place on chicken, roll and secure with wood picks. Brown chicken in oil in a heavy skillet. Add gravy and remaining ingredients. Simmer covered for 30 minutes.
