Inspired by trying seitan for the first time, I bought the faijita style of seitan. One evening I diced up garlic, sliced some onions, put in a pan to 'stir-fry' [please note I did some oil, but can easily be omitted] added two huge portello mushrooms sliced, cooked down a bit. Then added the slices of seitan. Added a bit of cinnamon, cumin, and chili powder. Heated tortilla till soft in non-stick pan, sprinkled a VERY small amount of reduced fat cheddar cheese, transfer to a plate and spooned in the mushroom-seitan mixture and folded up like a burrito. It was SO good. Made plenty. I had about burritos that night and made another five, wrapped up in waxed paper and brought lunch in for myself and a friend.
