Title: Shrimp Italienne Categories: None Yield: 4 Servings 2 tb Olive oil 1 tb Vegetable oil 4 tb Butter (salted) 1 tb Minced garlic 2 Green peppers, seeded, diced 1 c Chopped mushrooms 1 pn Cayenne pepper Salt and pepper to taste 1 1/2 lb Medium shrimp, boiled, -shelled 2 tb Chopped scallions 2 tb Finely chopped red onion Contributed by Rosemarie D'Amico. She also likes to add a pinch of saffron to her rice for something extra special. Heat the oils and 2 tablespoons of butter. Saute the garlic and mushrooms. Add the green pepper. Season with salt, pepper, and cayenne pepper. Sprinkle with paprika and add the remaining 2 tbsp butter. Add shrimp and shake over moderate heat for 5 minutes, covering them well with the sauteed mixture. Add scallions and onion. Serve with rice. Posted to Recipe Page 15 Sep 96 |
