Sidney's Cornbread
Title: Sidney's Cornbread Categories: Cajun, Breads Yield: 6 Servings 1/2 c Sifted flour 1 1/2 c Yellow cornmeal 1 ts Salt 2 ts Sugar 3 ts Baking powder 3 Eggs, beaten lightly 1 c Milk 1/4 c Cream 1/2 c Butter, melted Sift the dry ingredients together in a bowl. Add the eggs and milk and beat with a spoon until the mixture is just moist. Beat in the cream and melted butter. (Do not overbeat.) Pour the batter into an 8 1/2 x 11-inch buttered pan.
