Title: Smoked Salmon Quesadilla

Yield: 1 Servings

1 8" flour tortilla
2 oz Smoked mozzarella cheese;
-thin sliced or grate
1 1/2 oz Smoked salmon; diced
1/2 ts Cilantro; fresh, chopped

1. Heat your pan hot the add a small amount of oil.

2. add flour tortilla and begin to cook on one side then flip.

3. on one half add cheese, salmon, & cilantro.

4. Finish cooking until warmed through & cheese is melted.

Serving suggestions:

Serve on a bed of baby greens with Cilantro sour cream (1 cup sour cream +
1/4 cup fresh minced cilantro), lightly toss the greens with 1/2 oz olive
oil and
1/2 oz balsamic vinegar.

On the side serve mango salsa!
