Title: Southestern Shrimp Creole Categories: Main dish, Seafood, Creole Yield: 4 Servings 1/4 c Margarine or butter 1 md Onion, chopped 1 lg Green pepper, chopped 1 Garlic clove, minced 1 pk Diced pimientos (4 oz) 1/8 ts Salt 1/8 ts Pepper 1 cn RO*TEL Diced Tomatoes and -Green Chilies (10 oz) 1 lb Shrimp, shelled and deveined Cooked rice In a large skillet, melt margarine; saute onion, pepper and garlic until tender. Stir in pimientos, salt, pepper and RO*TEL; simmer 10 minutes. Add shrimp and cook until done, about 5 minutes, stirring occasionally. Serve with cooked rice.
