Title: Spaghetti Salad with Balsamic Dressing Categories: Pasta, Salads, Appetizers, Easy Yield: 8 Servings SALAD: 8 oz Uncooked spaghetti, broken -into thirds 6 Green onions, cut into 1/4 -inch pieces 4 Italian plum tomatoes, cut -in half lengthwise, sliced 4 oz Mozzarella cheese, diced (1 cup ) DRESSING: 1/4 c Olive oil 1/4 c Balsamic vinegar 1 ts Sugar 1/2 ts Dried basil leaves 1/4 ts Salt Cook spaghetti to desired doneness as directed on package. Drain; rinse in cold water to cool. In medium bowl, combine cooked spaghetti and all remaining salad ingredients. In small bowl, combine all dressing ingredients; blend well. Add to salad; toss to coat. Serve immediately, or cover and refrigerate until serving time. Yield: 8 (3/4-cup) servings.
