Special Cornbread
Title: Special Cornbread Categories: Breads Yield: 8 Servings 1 c Cornmeal 1/4 c All purpose flour 2 ts Baking powder 1/4 ts Sugar 1/4 ts Baking soda 1 ts Salt 14 1/2 oz Whole tomatoes, undrained 1 Medium onion, chopped 1 Egg, beaten 3 tb Shortening, melted Combine dry ingredients; add tomatoes, onion, eggs and shortening, mixing well. Be sure to chop tomatoes before adding. Heat iron skillet in 400 degree oven until very hot, pour in the batter, and bake at 400 for 30 minutes or until brown.
