Title: Spicy Carrot Salad Categories: Salads, Appetizers, Side dish, Vegetables Yield: 4 Servings 1 3/4 c Carrots, grated 2 Oranges, peeled, seeded & -- chopped 1/3 c Raisins 1/4 c Walnuts, chopped 1 tb Olive oil 2 tb Lime juice 1/2 ts Cumin, ground 1/4 ts Cinnamon 1 ts Liquid sweetener Lime slices, to garnish Combine carrots, oranges, raisins & walnuts in a large bowl & set aside. Place remaining ingredients in a jar with a lid & shake well. Pour over the carrots. Chil for at least one hour. Garnish with lime slices.
