Title: Spicy Mexican Rice Categories: Rice Yield: 5 Servings Vegetable cooking spray 1 ts Vegetable oil 1/2 c Uncooked long-grain rice 1/2 c Chopped onion 1 c Chopped tomato 1/3 c Chopped green pepper 1/4 ts Garlic powder 1/4 ts Ground red pepper 1/2 ts Chili powder 1 ts Beef-flavored bouillon -granules 1 -(up to) 1 1/4 c Water Coat a large skillet with cooking spray; add oil, and place over medium heat. Add rice and onion; saute about 3 minutes, stirring occasionally. Add remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 25 minutes or until tender.
