Title: Spicy Noodle Salad Categories: Pastanoodle, Salads Yield: 4 Servings 12 oz Spaghetti 2 tb Sesame oil 1 1/2 c Carrots, grated 1 1/2 c Bean sprouts 4 Green onions, chopped 1 tb Orange rind, grated 1/4 c Orange juice 1/4 c Tahini [optl] 3 tb Soy sauce 1 ts Granulated sugar 1 ts Hot pepper sauce 1/2 c Peanuts, chopped 1/4 c Fresh coriander, chopped In large pot of boiling salted water, cook spaghetti for 8-10 minutes or until tender but firm; drain and rinse under cold water. Drain well and transfer to bowl; toss with sesame oil. Add carrots, bean sprouts, onions and orange rind. Combine orange juice, tahini, soy sauce, sugar and hot pepper sauce; toss with spaghetti mixture. Sprinkle with peanuts and coriander.
