3/4 c Uncooked instant rice
1/4 c Chopped green bell pepper
1 tb Chopped fresh Oregano or 1
-tsp dried Oregano
1/4 ts Salt
1/8 ts Cayenne pepper
1 md Onion; chopped
1 Clove garlic; finely chopped
1 cn (16 oz) stewed tomatoes;
-undrained
1 cn (15 - 16 oz) black-eyed
-peas; drained

Heat all ingredients to boiling in 10 inch skillet, breaking up tomatoes
and stirring frequently; reduce heat. Cover and simmer about 10 minutes or
until liquid is almost absorbed.
