Spinach Salad with Orange Dijon Vinaigrette
Title: Spinach Salad with Orange Dijon Vinaigrette Categories: Canadian li, Salads Yield: 4 Servings 3 tb Vegetable Oil 3 tb Orange Juice; Frozen -Concentrate 1 tb White Wine Vinegar 1 ts Dijon Mustard 1/4 ts Salt 1/4 ts Pepper 4 c Spinach Leaves Or Salad -Greens, Fresh, Torn 4 c Bibb Lettuce; Torn 2 c Mushroom; Sliced In large bowl, whisk together oil, orange juice concentrate, 1 tablespoon water, vinegar, mustard, salt and pepper. Just before serving, add spinach, Bibb lettuce and mushrooms; toss to combine. Makes 4 servings. Per serving: 142 cals, 4 g pro, 11 g total fat, 10 g carb, 3 g fibre.
