Spinach-Orange Salad
Title: Spinach-Orange Salad Categories: Low fat, Salads Yield: 4 Servings 1/4 c Fresh lemon juice 1/2 c Fresh orange juice 1/2 ts Paprika 1 ts Garlic powder 1/8 ts White pepper 1 bn Spinach leaves 1/2 c Sliced jicama 2 Oranges, peeled, bite sized 1 Red onion, thinly sliced In a small jar or blender, combine juices, paprika, garlic powder and pepper: shake or blend until mixed. Cover and refrigerate until ready to use.Wash spinach and tear into bite-sized pieces. Combine with prepared jicama, oranges and onion in a large bowl. Pour dressing over and toss.
