Sticky Dip
Title: Sticky Dip Categories: Healthy and, Dips, Vegetables Yield: 6 Servings 1 c Cottage cheese 1/2 c Plain yogurt 1/2 c Water-packed tuna (white; -pref.solid pack), drained 1 c Chopped fresh spinach 1 ts Chopped fresh dill 1 Clove garlic; minced 2 Whole scallion; minced 2 ts Frozen apple juice -concentrate; thawed 1 ts Apple cider vinegar In a mixing bowl, blend together the cottage cheese, yogurt, and tuna, breaking up the chunks of tuna to make a relatively smooth mixture. Add the remaining ingredients and blend thoroughly together. Cover the bowl and refrigerate for 1 hour. NOTES : Makes 2 cups. Refrigerates: 4 days (mix thoroughly if the dip has been sitting for any time. This is a fabulous dip for steamed vegetables. You might also stuff eggs with Sticky Dip or serve it on wedges of pita.
