Title: Skillet Buttermilk Biscuits Categories: None Yield: 30 Biscuits 4 c Vegetable Oil 1 c Whole Wheat Flour 1 c All Purpose Flour 1 1/2 ts Baking Soda 1/4 ts Salt 1/4 c Vegetable Shortening 3/4 c Buttermilk Pour 1" of oil into a medium size skillet. Heat to 370 degrees. Combine the flours, baking soda and salt in a large bowl. Cut in the vegetable shortening until the mixture resembles coarse crumbs. Add the buttermilk. Mix lightly with a fork until the mixture clings together and forms a soft ball of dough. Break off pieces of the mixture, 1 per finished roll. Roll each piece into a 1" ball. Flatten the balls.
