Title: Sugar and Spice Carrot Cake Categories: Cakes Yield: 1 Servings 4 Eggs 1 1/2 c Brown sugar 1 1/2 c Grated carrots (3 large) 1 1/3 c Oil 2 1/4 c Flour 2 1/2 ts Cinnamon 1 1/2 ts Baking soda 1 ts Salt Beat eggs & sugar until fluffy & slightly thick. Add carrots & oil; blend well. Combine flour, cinnamon, soda & salt. Stir into egg mix. Pour into greased 13X9X2" baking pan. Bake at 350 for 45 minutes, or until cake tests done. Cool in pan. Frost. Frosting: Blend 1 (3 oz) pack softened cream cheese & 1/4 cup softened butter. Gradually blend in 2 1/4 cups confectioners sugar & 1 tsp. orange peel.
