Title: Summer Pasta Sauce

8 Plum tomatoes
1 lb Brie (rind removed)
1 c Fresh basil
4 Cloves garlic minced
1 c EX virgin olive oil
1/2 c Kamalta olives
Salt & pepper to taste
1 1/2 lb Linguine
Freshly grated Parmesan

Prepare ahead of time: In large bowl, combine tomatoes, chopped brie,
basil, garlic, olive oil, black olives and salt and pepper. Cover and set
aside at room temperature for 1 - 2 hours.

When you are ready to serve prepare pasta al dente, drain and toss with the
tomato sauce. The heat of the pasta will bring out the flavors and further
melt the brie to make a rich and creamy sauce. Top with Parmesan cheese and
serve immediately with a nice loaf of bread and a glass of wine !!!
