Title: Summer Salad (Some Ideas Were Borrowed From Various Postings Categories: None Yield: 1 Servings 1 lg Tomato; diced 1 Half cucumber; diced 1 tb Purple onion; minced 1 Clove garlic; minced 1 ts Fresh basil; minced (or more -to taste) Pepper and chili powder to -taste (I used a shake or 2 -of each) 1 tb Seasoned rice wine vinegar 1 ts Soy sauce (reduced sodium) -(up to 2) 1/2 ts Or less sesame oil Mix all together. Delicious as is, or can refrigerate for an hour to let flavors meld. I tasted it and couldn't stop-ate the whole thing!! This was a great light lunch, and very refreshing taste.
