Title: Sweet Date and Coconut Cookies

Yield: 8 Servings

Safflower oil -- for coating
Pan
3/4 c Honey
1 Egg
1 Egg white
1 c Dates -- chopped & pitted
1/4 c Grated fresh coconut
1/2 c Chopped almonds
1/2 c Raisins
1/2 c Whole-wheat pastry or
Unbleached white flour
1/2 ts Baking powder

1. Preheat oven to 350 degrees F. Lightly oil an 8-inch-square baking pan.

2. In a large bowl combine honey, egg, egg white, dates, coconut, almonds,
and raisins. In separate bowl sift together flour and baking powder.
Combine contents of two bowls, mix well, and pour into prepared pan. Bake
30 minutes.

3. Let cool, then slice.

Makes about 16 squares.
