Title: Sweet Napa Cabbage with Pasta

Yield: 1 Servings

8 oz Fresh angel hair pasta;
-cooked
2 tb Vegetable oil
1 Onion; sliced thin
2 Chinese eggplants; sliced
-thin
1/2 Head Napa cabbage; shredded
2 md Tomatoes; diced
1 tb Herbes de Provence

In a non-stick frying pan or a wok, heat oil until smoking. Add the onions
and cook until softened, about 4 minutes. Add eggplant and cook for 4 more
minutes. Add the cabbage, tomatoes and Herbes de Provence and simmer for 5
minutes. Toss with angel hair pasta and season to taste.

Yield: 2 generous servings
