Title: Tomato Vinaigrette Dressing - Lowfat Categories: Low, Fat Yield: 1 Servings 1/2 c Tomato Juice 2 tb Olive Oil 1 tb Balsamic Vinegar 3/4 ts Sugar 1/2 ts Dijon Mustard Salt; optional Pepper; to taste I was reading today's Food section in the Boston Globe (5/4/94), and thought of all of you on this list who are always looking for a good recipe for low fat salad dressing. Tomato juice replaces most of the oil in this reduced-fat recipe. In a small bowl or measuring cup, whisk ingredients until evenly blended.
