Title: Traditional Greek Salad

Yield: 1 Servings

4 Ripe medium tomatoes; cored
-and quartered
1 Cucumber; cut into 1/4-inch
-slices
1/2 c Kalamata olives
6 oz Feta cheese; crumbled
1/2 Red onion; thinly sliced
1 tb Red wine vinegar
3 tb Extra virgin olive oil
1/2 ts Dried oregano; crumbled
Salt and freshly ground
-black pepper

Decoratively arrange the tomatoes, cucumber, olives, feta cheese and red
onion on a platter. In a small bowl whisk together the vinegar, oil,
oregano, salt and pepper. Pour the dressing over the salad and serve.

Yield: 2 to 3 servings
